✅ ALLERGEN HANDLING AND CONTROL FOR A BAKERY USING PRE-PACKED FOODS AS INGREDIENTS

The ingredients we handle within our factory contain the following Allergens

1. Understanding the Legal Requirements

  • Allergenic ingredients must be clearly declared on pre-packed food labels as per food law (e.g., 14 EU-defined allergens).

  • When pre-packed foods are used as ingredients, declared allergens must be considered and controlled just as any other raw ingredient.

  • Key allergens include: Cereals (gluten), Crustaceans, Eggs, Fish, Peanuts, Soybeans, Milk, Nuts, Celery, Mustard, Sesame, Sulphur dioxide/sulphites, Lupin, Molluscs.

2. Supplier Assurance

  • Obtain specifications for all pre-packed food ingredients, including full allergen information.

  • Maintain records of allergen declarations and update them when suppliers change product composition.

  • Use only reputable suppliers who can provide consistent and accurate allergen documentation.

3. Receiving and Storage Controls

  • Label and segregate pre-packed products containing allergens from non-allergen ingredients.

  • Use dedicated shelving or containers with allergen labels (e.g., "CONTAINS NUTS").

  • Store allergens below or away from non-allergenic ingredients to avoid cross-contact.

4. Production Controls

a. Scheduling

  • If possible, produce non-allergen products before allergen-containing ones to reduce cross-contact.

  • Allow for cleaning time between production runs with different allergen profiles.

b. Zoning and Segregation

  • Physically separate areas or equipment for handling high-risk allergens (e.g., nuts, sesame).

  • Use color-coded tools and utensils for different allergens.

c. Label Check Before Use

  • Check every pre-packed product's label before use in production.

  • Verify declared allergens against recipe specifications and allergen matrix.

5. Cleaning and Sanitation

  • Use validated cleaning methods to remove allergen residues.

  • Clean shared equipment thoroughly between different allergen runs.

  • Maintain documented cleaning records as part of due diligence.

6. Staff Training

  • Train staff on allergen awareness, cross-contact prevention, and how to handle pre-packed allergen-containing products.

  • Include procedures for reading and interpreting allergen declarations on labels.

7. Documentation and Allergen Matrix

  • Maintain an allergen matrix listing all allergens present in each product, including those introduced via pre-packed ingredients.

  • Update matrix when recipes or suppliers change.

8. Labeling Finished Products

  • Finished product labels must reflect all allergens present, including those from pre-packed ingredients.

  • Use clear, bold font or contrasting background for allergen declarations (e.g., "Contains: Milk, Wheat, Egg").

9. Verification and Audit

  • Conduct regular internal audits of allergen control procedures.

  • Verify cleaning effectiveness (e.g., ATP swabs or allergen testing kits if appropriate).

  • Review documentation for completeness and compliance.

10. Allergen Incident Management

  • Establish a plan for managing allergen contamination or mislabeling incidents.

  • Procedures must include product recall protocols, customer communication, and investigation.
